Beanshuka Marinara


Ingredients

  • 4 large eggs
  • 1 cup marinara sauce
  • 1 cup canned black beans
  • 1 tablespoon ground cumin
  • 1/2 cup crumbled feta
  • Toast or bread

Recipe

Set eggs out

Combine cumin, black beans, and marinara and bring to a simmer

Make divets for eggs and crack eggs into them

Reduce heat to low and cover

Simmer to 4 to 6 minutes or until whites are set and the yolks are still runny

Top with feta and serve with toast
